Coconut Curry Lentil Soup

Ingredients
- 1 ½ cups dried brown lentils
- 6 cups vegetable broth
- 2 cups sweet potatoes, 1/2-inch cubes
- 4 cups kale, chopped
- 1 large onion
- 4 whole garlic cloves, minced
- 1 teaspoon salt
- 1 tablespoon fresh ginger, grated
- 3 tablespoons yellow curry powder
- ½ teaspoon ground cinnamon
- 1 can coconut milk, 13.66 fl oz
Instructions
- In a large pot, heat oil over medium heat.
- Sauté onions until translucent.
- Add everything except kale, bring to a boil, and then reduce to a simmer for 20 minutes.
- Add kale and simmer for 10 minutes.
