Instant Pot Chicken

Ingredients
- 4 lbs chicken, whole
- 1 cup chicken broth or water
- 4 cloves garlic, peeled & lightly smashed
- 2 teaspoons salt
- ½ teaspoons black pepper
- 1 teaspoons onion powder
- 1 teaspoons garlic powder
- ½ teaspoons paprika
- 1 tablespoons rosemary, dried
- 1 tablespoons thyme, dried
- ½ whole lemon
- 8 tablespoons unsalted butter, melted
Instructions
- Pat the chicken dry & use a spoon to loosen the skin from the flesh.
- Combine the seasonings, 1 tablespoon lemon juice from the lemon, and the melted butter.
- Add chicken broth or water to bottom of instant pot and add metal rack.
- Stuff the cavity of the chicken with the garlic cloves and the half lemon.
- Place the chicken breast-side up in the instant pot. Pour half the butter mixture under the skin, and then spread the rest on top of the skin.
- Set cook time for 24 mins (6 mins per pound) with 15 minute natural release.
