Mediterranean Quinoa Bowl

Ingredients
- ⅕ cups lemon juice
- 1 clove garlic, minced
- ¾ cups olive oil
- ½ teaspoons sea salt
- ½ teaspoons ground black pepper
- 3 whole bell peppers
- 6 cups garbanzo beans, cooked
Instructions
- Whisk ingredients together until combined.
- Preheat oven to 425 degrees Fahrenheit.
- Slice bell peppers & toss in olive oil on a baking sheet.
- Roast bell peppers for 25-30 mins.
- Spread walnuts on a baking sheet & roast in oven for 5-7 mins.
- Prepare bowls by adding roasted peppers, walnuts, quinoa, feta, Kalamata olives, cucumbers, and garbanzo beans. Drizzle with lemon dressing.
