Pad Thai Noodle Salad

Ingredients
- 1 inch fresh ginger, thinly sliced
- 4 cloves garlic
- 1 cups peanut butter
- 1 cups orange juice
- ⅝ cups lime juice
- ½ cups soy sauce
- ⅕ cups sesame oil
- 1 teaspoons sriracha sauce
- 2 teaspoons salt
- 12 ounces dry noodles
- 2 cups red cabbage, shredded
- 2 cups carrots, shredded
- 2 cups radishes, shredded
- 2 whole bell peppers, thinly sliced
- 6 whole scallions, sliced
- 1 bunch cilantro, chopped
- 2 tablespoons jalapenos, finely chopped
- 1 cup peanuts, crushed
- 2 whole limes, quartered
Instructions
- Blend ingredients in a blender or food processor.
- Cook noodles according to package. Drain and chill under cold running water.
- Toss all ingredients together, serving with a lime wedge.
