Peanut Stew

Instructions
- In a large pot over medium heat, heat the oil.
- Sauté the ginger, garlic, and onions until the onions become translucent.
- Add sweet potatoes, cumin, and red pepper and sauté for 5.5 minutes.
- Add vegetable vegetable broth, tomato paste, and peanut butter and stir until combined.
- Turn heat to high, cover, bring to boil, reduced to medium-low, and simmer for 20 minutes.
- Stir in the kale and simmer for 5 more minutes.
- Allow to cool and store in fridge until ready to cool.
- Top with chopped peanuts and enjoy!
