Refried Beans

Ingredients
- 2 tablespoons olive oil
- 1 cup yellow onion, finely chopped
- ½ teaspoons salt
- 4 whole garlic cloves, minced
- 1 teaspoons chili powder
- ½ teaspoons ground cumin
- 16 ounces dry pinto beans
- 1 cup water
- 4 tablespoons cilantro, chopped
- 2 tablespoons lime juice
Instructions
- Cook the dry pinto beans according to package instructions.
- In a medium pot, heat oil on medium heat.
- Sauté onions with salt until translucent.
- Stir in garlic, chili powder, and cumin.
- Stir in drained beans and water and cook covered for 5 minutes.
- Uncover and reduce heat to low.
- Mash beans with potato masher or fork to desire consistency.
- Cook for several minutes and then remove from heat.
- Stir in cilantro and lime juice.
