Sausage Lentil Soup

Ingredients
- 2 lb dry lentils
- 2 tablespoons olive oil
- 2 lb sausage
- 4 whole onions
- 4 stalks celery
- 4 whole carrots
- 4 cloves garlic
- 12 cups water or chicken broth
- 1 teaspoons salt
- 1 teaspoons black pepper
Instructions
- Sort & rinse lentils.
- Heat a large pot over medium heat.
- Add sausage & stir until cooked through (break up sausage if loose, or slice sausage beforehand if using links).
- Remove sausage and add olive oil.
- Stir in onions, celery, & carrots. Cook until they are tender.
- Add garlic & stir for about 30 seconds until aromatic.
- Add water/chicken broth and lentils, then bring to a boil.
- Reduce heat, cover, and simmer until lentils are tender.
- Season to taste with salt & pepper.
