Sauteed Cabbage with Tomato and Eggs
Description: This is inspired by shakshuka.

Ingredients
- 3 tablespoons olive oil
- 3 cups cabbage, chopped
- 2 whole onions, diced
- 8 cloves garlic, minced
- 4 teaspoons paprika
- 2 teaspoons cumin
- 1 teaspoons chili powder
- 56 ounces diced tomatoes
- ½ teaspoons sea salt
- ½ teaspoons ground black pepper
- 10 whole eggs, hard boiled
Instructions
- Heat olive oil in large pan over medium heat.
- Add cabbage and onions, and saute for 10-12 minutes until cabbage starts to caramelize.
- Add spices and garlic, stir for a minute.
- Add tomatoes, salt, and pepper, and stir.
- Cover with a lid and cook for 5 mins, then remove lid and cook for an additional 5 mins until cabbage starts to brown.
- Serve/place in meal prep containers with a hard boiled egg.
