Spicy Salmon Bowl

Ingredients
- ⅓ cups low-sodium soy sauce
- ⅓ cups extra-virgin olive oil
- ⅕ cups chili garlic sauce
- 1 whole lime, juiced
- 2 tablespoons honey
- 4 whole garlic cloves, minced
- 20 ounces salmon fillet
- ½ cups white vinegar
- ½ cups water
- 1 teaspoon salt
- 2 teaspoons sesame oil
- 3 whole cucumbers, thinly sliced
- 1 whole red onion, thinly sliced
- 1 whole carrot, grated
- ½ cups mayonnaise
- 2 tablespoons sriracha
- 2 teaspoons toasted sesame oil
- 2 cups brown rice
- 4 cups water
- 1 bunch fresh cilantro
- 1 teaspoons sesame seeds
- 1 whole avocado, sliced
Instructions
- Preheat oven to 350° and line a large baking sheet with foil.
- In a medium bowl, whisk together soy sauce, olive oil, chili garlic sauce, lime juice, honey, and garlic.
- Add salmon and gently toss to combine.
- Place on prepared baking sheet and bake until salmon is fork-tender, 20 to 25 minutes.
- In a microwave-safe bowl or jar, add vinegar, water, and salt and microwave until salt is dissolved, about 2 minutes.
- Stir in sesame oil.
- Add cucumbers, red onions, and carrots.
- In a small bowl, combine mayonnaise, Sriracha, and sesame oil.
- Combine the rinsed rice, water, and olive oil in a pot and bring to a boil. Cover, reduce the heat to low, and simmer for 45 minutes.
- Remove from the heat and let it sit, covered for 10 more minutes. Fluff with a fork.
- Divide rice among 5 bowls.
- Top with salmon, pickled cucumbers, carrot, red onion, cilantro, and sesame seeds.
- Drizzle with spicy mayo.
- At mealtime, sliced avocado and add on top.
