Street Corn Spinach Salad

Ingredients
- 2 cups corn kernels, fresh or frozen
- 2 tablespoons butter
- 1 whole jalapeno pepper, diced
- 2 tablespoons mayonnaise
- 1 pinch cayenne pepper
- ⅕ teaspoon chili powder
- ½ teaspoon salt
- 2 tablespoons white vinegar
- 1 8-oz container feta
- 1 whole lime, cut into wedges
- 1 8-oz bag baby spinach
Instructions
- Add corn kernels and salt. Sauté for 4 minutes, then remove from heat and cool.
- Add cooled corn to meal prep container. Mix in mayonnaise, cayenne pepper, chili powder, and white vinegar until mixed thoroughly.
- Before serving, add the queso fresco and fresh lime juice.
- Lay a bed of spinach in your serving container.
- Add street corn on top.
