Vegan Broccoli Salad

Ingredients
- 1 cup olive oil
- 6 tablespoons apple cider vinegar
- 3 tablespoons dijon mustard
- 3 tablespoons maple syrup
- 3 whole garlic cloves, minced
- ½ teaspoon salt
- 1 ½ cups sunflower seeds
- 3 pounds broccoli florets, chopped
- 2 whole red onions, chopped
- 1 cup raisins, chopped
Instructions
- Whisk all dressing ingredients in a bowl.
- In a small skillet over medium heat, cook and stir constantly until the seeds are golden brown.
- Allow to cool and store in a serving bowl.
- Add chopped broccoli, red onion, and raisins to a large bowl.
- Pour dressing over salad and stir until evenly coated.
- Top individual servings with toasted sunflower seeds.
