Veggie Burrito Bowl

Ingredients
- 6 cups brown rice, cooked
- 1 whole lime, juiced
- ½ bunch cilantro
- 2 tablespoons olive oil
- 6 whole bell peppers, sliced
- 6 whole onions, sliced
- 4 whole jalapeños, sliced
- 3 cloves garlic, minced
- 4 whole avocados
- ½ bunch cilantro
- ½ cups plain Greek yogurt
- 1 clove garlic
- 2 whole limes, juiced
- 5 cups black beans, cooked
- 5 whole tomatoes, diced
- 3 cups corn
Instructions
- Wash & chop cilantro.
- Once brown rice is cool, stir in lime juice and cilantro.
- Preheat the oven for 425F and coat baking sheet(s) with oil.
- Add garlic, bell peppers, onions, and jalapeños to the baking sheet(s) and toss to coat with oil.
- Place baking sheet(s) in oven for 35 minutes.
- Blend ingredients together in a food processor or blend until combined.
- Layer the cilantro brown rice, peppers & onions, avocado cream sauce, black beans, tomatoes, and corn in a meal prep container or bowl. Enjoy!
