White Bean Chicken Chili

Ingredients
- 2 tablespoons olive oil
- 2 large onions, chopped
- 4 cloves garlic, minced
- 4 pounds ground chicken
- 2 teaspoons salt
- 2 tablespoons ground cumin
- 1 tablespoon dried oregano
- 2 teaspoons chili powder
- 3 tablespoons flour
- 4 15-ounce can white beans, rinsed and drained
- 12 ounces kale, chopped
- 4 cups frozen corn
- 4 cups low-sodium chicken stock
- 4 cups water
- ½ teaspoon crushed red pepper flakes
- 1 teaspoon ground black pepper
Instructions
- In a large pot, heat oil on medium-high heat.
- Add onions and cook until translucent.
- Add garlic and cook for 15 seconds.
- Add chicken and spices and cook for 10 minutes. Stir frequently.
- Stir in flour.
- Add beans, kale, corn, chicken stock, and water.
- Bring to a simmer and cook for 1 hour.
- Stir in red pepper flakes and black pepper.
- Cool thoroughly and place in refrigerator.
